Mediterranean Chicken

MAKES 5 PORTIONS

Prep + Cooking Time: 20 minutes


Ingredients

1/2 tbsp olive oil
350g/12oz courgettes / zucchini, peeled and diced
180ml/6 fl oz water with a bay leaf
1 chicken breast (approx. 125g/4oz)
A little bit of freshly grated parmesan

Method:

  • Heat the olive oil in a pot (I like to use a cast iron pan for this: the thick bottom is great to cook evenly) and soften the courgettes until they are fairly soft (about 5minutes.)
  • Add the water and bay leaf and bring to the boil.
  • Reduce the heat, then add the chicken (cut into small pieces.) Cook for about 10 minutes: check the chicken towards the end. It must be thoroughly cooked - sushi-grade and al-dente are not acceptable!
  • If your child is still toothless remove the bay leaf before blending. It tastes great with a sprinkle of parmesan cheese, and goes well with rice (baby rice or for toddlers use long grain / basmati.) The remainder can be frozen in individual portions.

Using the same method you can cook variations of this dish by using different vegetables: mushrooms, eggplant / aubergine and squash work well.
